General Description

  • looks like the standard white varieties but with a pale green head
  • they have a higher vitamin A content than white caulis
  • common green varieties are ‘Alverda’, ‘Macareta’ and ‘Limelight’,
  • some green caulis are actually a cross between the white cauli and broccoli – called ‘broccoflower’ (link).
  • there are also green types called a Romanesco cauliflower or ‘Chou romanesco’
  • these have light green heads made up of very distinctive mosaic of conical spiky florets
  • also called Pyramid Cauliflower
  • this form has a sweet nutty taste
