Broad Beans with Orecchiette

Description:
A quick and simple dish which compliments a wide range of side dishes.
Ingredients:
- 500 gms broad beans (fresh or frozen)
- 1 onion chopped finely
- 2 stalks fresh dill
- 3 tablespoons olive oil
- 1 litre water
- Salt and pepper
- 160 gms orecchiette (any other small pasta can be used)
Method:
- In a large pot heat the olive oil, then add the onion, beans and dill, stir frequently for about 5 minutes, season to taste, then add the water. Allow the beans to come to the boil, and then simmer for about 1 hour or until tender.
- Once beans are cooked, add the pasta and cook until al dente and serve.
