Corn and Tomato Soup

Description:

Delicious and chunky, this soup can be enjoyed as a main meal.

Ingredients:

 

  • 2 rashers bacon
  • 1 small onion, finely chopped
  • 3 garlic cloves, crushed
  • 1/2 cup diced red capsicum
  • 1/2 cup diced green capsicum
  • 4 Roma tomatoes, finely chopped
  • 3 cups low-salt home made chicken stock
  • 2 cups corn kernels
  • Salt and pepper to taste
  • 2 spring onions, white part only, sliced

Method:

 

  1. Slice bacon into thin strips and put into a pan over medium heat and cook 5 minutes. Add onion and garlic and cook gently 3 minutes. Add capsicum and tomatoes with stock and simmer 10 minutes. Stir in corn and simmer a further 10 minutes. Add salt and pepper to taste. Serve garnished with spring onion.
