Green Rice Pilaf

Description:
This delicious rice meal is easy to make and a great way to eat greens!
Ingredients:
- 3 cups well-packed leafy greens and herbs. (Use an assortment of available produce, such as rainbow chard, silverbeet, sorrel, parsley, chives, sage, oregano and basil).
- 2 tablespoons olive oil
- 60g butter
- 6 spring onions washed & finely chopped
- 4 x garlic cloves, finely chopped
- 2 cups long grain rice
- 3 cups water / chicken stock
- Salt flakes
- Pepper
Utensils:
- Lettuce spinner
- 1 x large thick based pot & lid
- Wooden spoon
Method:
- Prepare the greens by washing, drying in the salad spinner and chopping. Cut into 2cm ribbons.
- Chop the herbs and spring onions finely.
- Heat the oil & half the butter in the heavy based pot. Add garlic, greens & spring onions and cook for 3 minutes, stirring continuously.
- Add all the rice, and stir.
- Add water / stock and salt and stir.
- Bring to the boil over medium heat, then turn heat down to very low and cover with lid. Cook 20 minutes or until all liquid has evaporated (do not stir).
- Once all liquid has evaporated, stir in the rest of the butter, and leave with lid on 5 to 10 mins before serving.
- Grind some pepper over before serving.
