Grilled Garlic Mushrooms with Garlic Yogurt Dressing

Description:

A tasty snack which can also compliment a range of different meals.

Ingredients:

 

  • 1 tablespoon (20g) Australian reduced fat dairy spread
  • 1 clove garlic, crushed
  • 4 large field mushrooms
  • 1 cup Australian skim or low fat natural yogurt
  • 1/2 red capsicum, diced
  • 2 tablespoons finely chopped flat leaf parsley
  • pepper, to taste

Method:

 

  1. Heat dairy spread and half the garlic in a frypan over low heat until melted. Add mushrooms and sauté for 2-3 minutes.
  2. Remove from frypan and place under a hot grill, cook for a further 5 minutes or until tender.
  3. Combine yogurt, red capsicum, parsley and remaining garlic and season to taste.
  4. Top mushrooms with yogurt dressing and serve.
