Roasted Capsicum and Olive Bruschetta

Description:

Ideal as a starter or team this Bruschetta up with your favourite soup to make a light meal.

Ingredients:

 

  • 1 bread stick
  • 2-3 tbsp olive oil
  • 2 crushed garlic cloves
  • 2 roasted capsicums, thinly sliced
  • 12 sliced pitted or stuffed olives
  • Fresh basil leaves
  • Coarsely ground black pepper

Method:

 

  1. Preheat oven to 200°C.
  2. Cut 1 bread stick into long diagonal slices.
  3. Combine olive oil with crushed garlic cloves and brush mixture over the bread slices.
  4. Bake until lightly browned, about 10 minutes.
  5. Remove from oven and top with roasted capsicum slices, olives, fresh basil leaves and pepper.
