Summer Crunch Salad

Description:
A lovely salad served with crusty bread for a light meal or team up with your favourite barbecued meat, chicken, seafood or fish.
Ingredients:
- 1 carrot, diced
- 1 avocado, diced
- 1 red capsicum, diced
- 2 firm ripe tomatoes, diced
- 2 Lebanese cucumbers, diced
- 1 stick celery, diced
- 1/2 red or white onion, diced
- 1/2 cup chopped Italian flat leaf parsley
Dressing
- 2 tbsp extra virgin olive oil
- 1 tsp honey
- Juice of 1/2 lemon
- 1/4 tsp sweet paprika
- Coarsely ground black pepper
Method:
- Combine carrot, avocado, capsicum, tomatoes, cucumber, celery, red or white onion and chopped parsley.
- Prepare the dressing by combining the olive oil, lemon juice, paprika and black pepper in a small bowl. Pour over the salad, toss through and serve at once.
Tip: To add even more crunch, serve this salad in small -medium sized leaves of crisp Iceberg lettuce.
