Description:
Layers of the best of summer fruits with a juicy syrup.
Ingredients:
- 500g watermelon
- 3/4 punnet strawberries
- 1/3 punnet raspberries
- 1/3 punnet blueberries
- 1 sprig mint
- 1/2 cup sugar
- 1/2 cup water
Method:
- Place sugar and water in saucepan and bring to the boil, stirring occasional ( you can add a splash of champagne or a liqueur if you desire)
- Simmer until all sugar is dissolved and liquid starts to thicken, remove from heat and chill
- Peel and cut watermelon into 2cm dice
- Wash and hull strawberries, removing leaves
- Wash, pick and shred mint
- Place fruit, berries and mint in serving bowl or glass and pour over sugar syrup
