Chilli Prawn Avocado Antipasto

Description:
This avocado antipasto is an ideal starter or delicious for a nutritious, quick snack or a light meal.
Ingredients:
- 2 tbsp peanut oil
- 2 finely sliced spring onions
- 1 finely sliced chilli
- 12 green prawns, shelled and de-veined.
- 1 tsp honey
- 1 tsp sesame oil
- 2 avocados, cut in half lengthways, pip removed
- Juice of 1/2 lime or lemon
- Fresh coriander leaves
Method:
- Heat frypan over high heat. Add peanut oil, spring onions, sliced chillies and prawns. Cook until prawns change colour, shaking pan over heat (do not overcook or they will become rubbery).
- Remove pan from heat and drizzle over 1 tsp honey, 1 tsp sesame oil and juice of 1/2 lime or lemon.
- Arrange avocado halves on serving plates and spoon prawns on top. Sprinkle with coriander leaves and serve at once
Tip: To prevent browning, immediately sprinkle avocado halves with lemon or limejuice.
