Peaches with Amaretti Biscuits

Description:

A simple fruit made special enough for a dinner party.

Ingredients:

 

  • 2 sheets sweet puff pastry
  • 4 peach halves (yellow variety, canned may be used)
  • 8 crushed Amaretti biscuits
  • 6 tbsp Amaretto liqueur
  • 6 tsp crushed walnuts
  • 1 egg beaten with a little water

Method:

 

  1. Crush the Amaretti biscuits and combine with the liqueur and crushed walnuts until you get a soft paste.
  2. Scoop the paste into the hollow of the peach, wrap each peach in puff pastry, cut off excess pastry and seal with a fork, to give a nice pattern. Put peaches (filling side down) on a baking tray, which has been lined with baking paper, and then brush the tops with the egg wash.
  3. Bake in a preheated oven at 180°C for 20 minutes or until the pastry is golden brown. Serve warm with a scoop of vanilla ice cream and a dusting of icing sugar.
