Penne Pasta with Mushrooms, Rocket and Chilli

Description:

Full flavoured pastas dish that is easy to prepare and serve.

Ingredients:

 

  • 500g penne
  • 2 tsp chilli
  • 50g black pitted olives
  • 60g rocket
  • 150g button mushroom
  • 40g shaved parmesan
  • 1/4 red onion
  • 1 sprig continental parsley
  • 2 tsp oil olive
  • 1/4 cup white dry wine
  • salt to taste
  • pepper to taste

Method:

 

  1. Pick wash and finely chop parsley and chilli
  2. Peel and cut onion into 1/2 cm dice
  3. Peel and finely chop garlic
  4. Wash rocket • Slice mushrooms
  5. Fill saucepan with water, add salt and bring to the boil , cook penne until tender (al dente) and refresh in cold water, drain
  6. Squeeze a little lemon juice on cooked pasta and mix thoroughly
  7. Pour oil into heavy based saucepan, heat, add onions , garlic and mushrooms and sauté for a few minutes
  8. Add chilli and wine and simmer for several minutes
  9. Check seasoning, add salt and pepper
  10. Mix in rocket and heat through, then add penne tossing until penne is hot
  11. Serve hot, garnish with freshly shaved parmesan cheese
