Orange and Red Onion Avocado Antipasto

Description:
This avocado antipasto is an ideal starter or delicious for a nutritious quick snack or a light meal.
Ingredients:
- 2 avocados, cut in half lengthways, pip removed
- 4 small lettuce leaves (see Tip)
- 1 navel orange, peeled and sliced thinly
- 1/5 small Red Onion, sliced thinly
- 12 small mint leaves
Dressing:
- 2 tbsp extra virgin olive oil
- Juice of 1/2 orange
- Coarsely ground black pepper
Method:
- Arrange avocado halves on serving plates and put a small lettuce leaf in hollow of each avocado.
- Arrange thin slices of peeled orange in lettuce, then top with finely sliced Red Onion and small mint leaves.
- To prepare dressing: combine olive oil with orange juice and pepper in a screw topped jar and shake until combined.
- Drizzle over avocados and serve at once.
Tip:
- To prevent browning, immediately sprinkle avocado halves with lemon or lime juice.
- For the lettuce, try using radicchio, which is a rich crimson colour and has a lovely bitter edge.
