Summer Crunch Salad

Description:

A lovely salad served with crusty bread for a light meal or team up with your favourite barbecued meat, chicken, seafood or fish.

Ingredients:

 

  • 1 carrot, diced
  • 1 avocado, diced
  • 1 red capsicum, diced
  • 2 firm ripe tomatoes, diced
  • 2 Lebanese cucumbers, diced
  • 1 stick celery, diced
  • 1/2 red or white onion, diced
  • 1/2 cup chopped Italian flat leaf parsley

Dressing

  • 2 tbsp extra virgin olive oil
  • 1 tsp honey
  • Juice of 1/2 lemon
  • 1/4 tsp sweet paprika
  • Coarsely ground black pepper

Method:

 

  1. Combine carrot, avocado, capsicum, tomatoes, cucumber, celery, red or white onion and chopped parsley.
  2. Prepare the dressing by combining the olive oil, lemon juice, paprika and black pepper in a small bowl. Pour over the salad, toss through and serve at once.

Tip: To add even more crunch, serve this salad in small -medium sized leaves of crisp Iceberg lettuce.
