Semi-dried Tomato Avocado Antipasto

Description:

This avocado antipasto is an ideal starter or delicious for a nutritious quick snack or a light meal.

Ingredients:

 

  • 2 avocados, cut in half lengthways, pip removed
  • 16 semi-dried tomatoes, sliced
  • Feta cheese, sliced thinly
  • Halved pitted olives
  • Fresh basil leaves.

Dressing

  • 2 tbsp extra virgin olive oil
  • Juice of half lemon
  • Cracked black pepper

Method:

 

  1. Arrange avocado halves on serving plates and arrange semi-dried tomatoes, feta cheese, olives and basil leaves in pip cavity of each avocado.
  2. To make the dressing: combine olive oil, lemon juice and pepper in screw topped jar and shake until combined.
  3. Drizzle over avocados and serve at once.

Tip: To prevent browning, immediately sprinkle avocado halves with lemon or lime juice.
