Description:
This versatile pesto is ideal to add to sauces or to pasta for a light meal.
Ingredients:
- 1 bunch basil, leaves removed from stalks
- 6 garlic cloves, peeled
- 1/2 cup olive oil
- 1/4 cup pine nuts, hazel nuts or walnuts
- Salt and freshly ground pepper to taste
Method:
- Using a food processor, process the basil leaves with the garlic and olive oil then add the pine nuts (or hazel nuts or walnuts) and process until you reach the desired consistency.
- Use at once or store in screw top jar in fridge for 7 – 10 days.
Tip: When supplies of fresh basil are abundant, make plenty of pesto and store in ice cube trays in the freezer to ensure a ready supply in the cooler months.
