Mushroom & Greens Stir-Fry

Description:
Great to include in a buffet meal or to accompany a bar-b-que.
Ingredients:
- 1 tbsp oil
- 250g sliced flat mushrooms, sliced
- 2 leeks or 200g Brussels sprouts, trimmed and sliced
- 1 bunch baby bok choy, shredded
- 1 tbsp soy sauce
Method:
- Heat wok over high heat. Add oil and stir-fry mushrooms, leeks (or Brussels sprouts) and bok choy until just tender and juicy.
- Add soy sauce and pepper to taste and serve at once.
Tip: Try using oyster sauce for non vegetarians and serve with grilled or roasted chicken, pork or beef.
