Cos Lettuce, Tomato & Salmon Salad

Description:

A light, nutritious main meal or ideal as part of a buffet meal.

Ingredients:

 

  • 12 Cos lettuce leaves
  • 1 avocado, sliced
  • 2 Lebanese cucumbers
  • Smoked salmon, sliced
  • 2 tomatoes, cut into wedges

Dressing:

  • 2 tbsp extra virgin olive oil
  • 2 tbsp white wine vinegar
  • 1 tbsp sliced chives
  • Coarse black pepper

Method:

 

  1. Arrange Cos lettuce leaves, avocado wedges, sliced cucumber, sliced smoked salmon and quartered tomatoes, on serving plates or platter.
  2. Combine dressing ingredients, drizzle over salad and serve at once.

Tip: For a change, replace the smoked salmon with sliced feta cheese and add some black olives.
