Stir-fried Asian Greens with Rice Noodles

Description:

Wonderful combination of crisp greens stir fried with authentic asian flavours.

Ingredients:

 

  • 500g flat rice noodles
  • 180g chinese broccoli
  • 1 stem spring onion
  • 2 bunches bok choy
  • 50g snow peas
  • 80g bean shoots
  • 1 bunch choy sum
  • 2 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 clove garlic
  • 10 grams fresh ginger
  • salt to taste
  • 1 tbsp vegetable oil
  • 1/2 tsp sesame oil

Method:

 

  1. Soak rice noodles in cold water to soften, 10 minutes, Then drain and set aside
  2. Peel and finely chop garlic and garlic
  3. Wash and slice spring onions
  4. Wash and cut broccolini into 5cm lengths
  5. Wash and cut leaf vegetables, bok choy , choy sum
  6. Wash and trim snow peas
  7. Fill saucepan with water, add salt and bring to the boil, blanch broccolini and refresh
  8. Pour sesame and vegetable oils into heavy based saucepan or wok, heat and add onion, garlic and quickly stir-fry
  9. Toss through broccolini, snow peas and leaf vegetables
  10. Toss through noodles, add soy sauce and oyster sauce, tossing until completely heated through
  11. Check seasoning
  12. Add bean shoots and spring onions, quickly toss and serve
