Originating in Brazil and Paraguay. The Rough Leaf is smaller than the Smooth Leaf varietal, with a tough, waxy rind, which is a dark green-yellow to orange-yellow when the fruit is ripe. Leaves are broad and serrated while flesh varies from white to yellow and is sweeter than other varieties, but less juicy. Eaten fresh, it can be widely used in cakes, sundaes, salads, desserts and beverages. Traditionally served with ham, it also complements seafood and chicken dishes. Choose fruit that are strong in aroma and heavy for their size. Nodules should be flat and hollow like.
