Avocado Cabbage Salad

Description:

Cabbage need not be boring – dress it up with avocado for a great alternative to coleslaw.

Ingredients:

 

  • 2 avocados
  • ¼ white cabbage
  • 1 tomato
  • ½  red capsicum
  • 1 small cucumber
  • ¼ bunch coriander
  • ¼ bunch mint
  • Squeeze of lemon
  • 1 tbsp white wine vinegar or apple cider vinegar
  • 3 tbsp olive oil
  • Salt and pepper to taste

Method:

 

  1. Using a ‘V’ slicer or food processor slice the cabbage as thin as possible. Cube the avocado, tomatoes, cucumber and capsicum and place into a bowl.
  2. Then add in the cabbage, sliced mint, coriander. Squeeze lemon juice over the mixture, drizzle with olive oil and add vinegar.
  3. Season with salt to taste and mix together well.

 Tip: You can also just do cabbage, avocado with garlic, lemon and olive oil.
