Avocado Cabbage Salad

Description:
Cabbage need not be boring – dress it up with avocado for a great alternative to coleslaw.
Ingredients:
- 2 avocados
- ¼ white cabbage
- 1 tomato
- ½ red capsicum
- 1 small cucumber
- ¼ bunch coriander
- ¼ bunch mint
- Squeeze of lemon
- 1 tbsp white wine vinegar or apple cider vinegar
- 3 tbsp olive oil
- Salt and pepper to taste
Method:
- Using a ‘V’ slicer or food processor slice the cabbage as thin as possible. Cube the avocado, tomatoes, cucumber and capsicum and place into a bowl.
- Then add in the cabbage, sliced mint, coriander. Squeeze lemon juice over the mixture, drizzle with olive oil and add vinegar.
- Season with salt to taste and mix together well.
Tip: You can also just do cabbage, avocado with garlic, lemon and olive oil.
