Avocado Pine Gelato

Description:

Enjoy as a snack or Serve with thinly sliced pineapple and mint leaves for a stunning desert. Even though we mostly eat avocados as a vegetable, they are actually a fruit – so they make luscious desserts like this one.

Ingredients:

 

  • 1 pineapple
  • 3/4 cup caster sugar
  • 2 avocados, skin and pips removed
  • 2 tsp vanilla essence

Method:

 

  1. Using a large sharp knife, cut 1 pineapple in half then cut into thick slices.
  2. Using a small sharp serrated knife, remove the skin and tough centre. Cut pineapple into chunks and combine with caster sugar. Set aside 10 minutes (see Tip).
  3. Using a food processor, blend avocados with prepared pineapple and vanilla essence until thoroughly combined and smooth.
  4. Pour into freezer container or lunchbox and freeze 6 hours,
  5. Turn out of container and, using a large sharp knife, cut into slices or spears and serve at once.

Tip: Combining fruit with sugar – and allowing it to stand 10 minutes – allows juices to be given off, thus making blending easier.

* Kids will need adult supervision using a blender.
