Description:

This versatile pesto is ideal to add to sauces or to pasta for a light meal.

Ingredients:

 

  • 1 bunch basil, leaves removed from stalks
  • 6 garlic cloves, peeled
  • 1/2 cup olive oil
  • 1/4 cup pine nuts, hazel nuts or walnuts
  • Salt and freshly ground pepper to taste

Method:

 

  1. Using a food processor, process the basil leaves with the garlic and olive oil then add the pine nuts (or hazel nuts or walnuts) and process until you reach the desired consistency.
  2. Use at once or store in screw top jar in fridge for 7 – 10 days.

Tip: When supplies of fresh basil are abundant, make plenty of pesto and store in ice cube trays in the freezer to ensure a ready supply in the cooler months.
