Broad Beans with Orecchiette

Description:

A quick and simple dish which compliments a wide range of side dishes.

Ingredients:

 

  • 500 gms broad beans (fresh or frozen)
  • 1 onion chopped finely
  • 2 stalks fresh dill
  • 3 tablespoons olive oil
  • 1 litre water
  • Salt and pepper
  • 160 gms orecchiette (any other small pasta can be used)

Method:

 

  1. In a large pot heat the olive oil, then add the onion, beans and dill, stir frequently for about 5 minutes, season to taste, then add the water. Allow the beans to come to the boil, and then simmer for about 1 hour or until tender.
  2. Once beans are cooked, add the pasta and cook until al dente and serve.
