Calamari with bok choy

Description:

Delicious combination of calamari, lemon, chilli and asian greens.

Ingredients:

 

  • 2 calamari tubes
  • 2 bunches bok choy
  • 80 grams bean shoots
  • sambal olek chilli to taste
  • salt to taste
  • pepper to taste
  • 1 lemon
  • 1 clove garlic
  • 5 grams ginger
  • 1 small red capsicum
  • 1/2 brown onion

Method:

 

  1. Cut Lemons in half and squeeze juice into a bowl
  2. Clean calamari by cutting open tubes length wise and scraping out any sinews from the inside
  3. Score the calamari by cutting the out side in a criss cross pattern with a sharp knife about half the way through
  4. Cut the calamari into large strips and curl up with the scored side on the out side.
  5. Place calamari in the lemon juice with the sambal and seasoning, allow to marinate for 2 hours
  6. Peel and cut onion into 2 cm dice
  7. Wash and pick coriander
  8. Peel and finely chop garlic and ginger
  9. Wash capsicum and cut in half removing core and seeds, cut diagonally into strips
  10. Wash and cut bok choy into strips
  11. Pour oil into heavy based saucepan or wok, heat and add onion, garlic and quickly stir-fry
  12. Add calamari and capsicum and stir-fry until tender, toss in bok choy and bean shoots
  13. Check seasoning
  14. Garnish with picked coriander
  15. Serve with steamed rice or stirfried egg noodles
