Caramelised Pineapple with Bananas and Butterscotch Macadamias

Description:

A delicious, ‘special occasion’ dessert featuring fruit and nuts.

Ingredients:

 

  • 2 tbsp unsalted butter
  • 1/2 cup brown sugar
  • 1/2 C, skin removed
  • 3 bananas, sliced
  • 1 punnet strawberries
  • Mint Leaves to decorate
  • 1 cup macadamia nuts (unsalted)

Method:

 

  1. Heat 2 tbsp unsalted butter in large frypan. Add 1/2 cup brown sugar and stir over medium heat until sugar dissolves.
  2. Cut pineapple into 1 cm rounds. Add to pan and cook over low-medium heat 5 minutes, turning halfway through cooking time.
  3. Remove pineapple, draining excess juices back into pan.
  4. Arrange pineapple on platter with bananas, strawberries and mint leaves.
  5. Return pan to stove and add 1 cup macadamias. Shake pan over medium heat until coated with mixture. Scatter over fruit on platter and serve at once.
