Description:

Corn is a most satisfying vegetable snack ideal for picnics or school lunches as well as a side dish for barbeques.

Ingredients:

 

  • 2 corncobs
  • Salt
  • 1/2 tbsp olive oil
  • 2 tsp butter or spread
  • Freshly ground black pepper
  • 2 tbsp coriander leaves, finely chopped
  • 2 lemon or lime wedges

Method:

 

  1. Strip the corncobs of their leaves and silk, wash the cobs and cut them in half. Cook corncobs for 5 minutes in a large volume of salted boiling water until tender, then drain.
  2. Drizzle corncobs with a little olive oil and spread with a little butter. Season with pepper and sprinkle with coriander leaves. Just before serving, squeeze a little lemon juice over the corn.
  3. Corn is one of the most satisfying vegetable snacks and can be seasoned with your choice of spices, like pepper or cumin, and herbs, like chives, dill or coriander
