Cos Lettuce, Tomato & Salmon Salad

Description:
A light, nutritious main meal or ideal as part of a buffet meal.
Ingredients:
- 12 Cos lettuce leaves
- 1 avocado, sliced
- 2 Lebanese cucumbers
- Smoked salmon, sliced
- 2 tomatoes, cut into wedges
Dressing:
- 2 tbsp extra virgin olive oil
- 2 tbsp white wine vinegar
- 1 tbsp sliced chives
- Coarse black pepper
Method:
- Arrange Cos lettuce leaves, avocado wedges, sliced cucumber, sliced smoked salmon and quartered tomatoes, on serving plates or platter.
- Combine dressing ingredients, drizzle over salad and serve at once.
Tip: For a change, replace the smoked salmon with sliced feta cheese and add some black olives.
