Energy Salad Sandwich

Description:

A sandwich is easy to digest, satisfying, easy to transport and a great source of varied nutrition.

Ingredients:

 

  • 2 slices of wholemeal bread
  • 2 tbsp hummus or mashed avocado
  • 2 lettuce leaves
  • 1 small carrot, grated
  • 1 small tomato, sliced
  • 2 slices of cooked beetroot
  • 2 tbsp alfalfa

Method:

 

  1. Spread the two slices of bread with hummus. Top one with lettuce leaves, sliced tomato, grated carrot, sliced beetroot and alfalfa.
  2. Top with the second slice of bread and cut in half. Eat or wrap in plastic to enjoy later.
