Description:
A sandwich is easy to digest, satisfying, easy to transport and a great source of varied nutrition.
Ingredients:
- 2 slices of wholemeal bread
- 2 tbsp hummus or mashed avocado
- 2 lettuce leaves
- 1 small carrot, grated
- 1 small tomato, sliced
- 2 slices of cooked beetroot
- 2 tbsp alfalfa
Method:
- Spread the two slices of bread with hummus. Top one with lettuce leaves, sliced tomato, grated carrot, sliced beetroot and alfalfa.
- Top with the second slice of bread and cut in half. Eat or wrap in plastic to enjoy later.
