Experienced 25-year retailer Anthony “Chevy” Impala has been managing this shop for owner, butcher, Tony Mastramano for only 18 months, but in that time has increased turnover by five times. It’s a spacious area within a busy strip shopping complex of seven businesses under the label “Extra Fresh.” Big displays attract shoppers, and there’s a large and popular range of prepacks and fresh salads always on offer, with four of the 13 staff at work throughout the day preparing them. They include soup mixes, stir fries, green mixes, fruit salads, peeled and segmented citrus, and even shop-made dips. Stocks of these need replenishment four to five times a day. Staff wear the bright red “Fresh Daily” aprons and good use is made of promotional posters.
