Feta Potato Mash

A Quick and easy dish that compliments many meals.
Ingredients:
- 4 medium potatoes, peeled and chopped
- 1/4 cup Australian skim milk, warmed
- 100g Australian reduced salt feta, crumbled
- 40g Australian parmesan cheese
- 2 tablespoons finely snipped chives
- freshly ground black pepper, to taste
Method:
- Cook potatoes in boiling water until tender. Drain.
- Using a potato masher, mash hot potatoes until smooth. Add milk, feta, parmesan and chives, stir until combined. Season to taste.
