Feta Potato Mash

Description:

A Quick and easy dish that compliments many meals.

Ingredients:

 

  • 4 medium potatoes, peeled and chopped
  • 1/4 cup Australian skim milk, warmed
  • 100g Australian reduced salt feta, crumbled
  • 40g Australian parmesan cheese
  • 2 tablespoons finely snipped chives
  • freshly ground black pepper, to taste

Method:

 

  1. Cook potatoes in boiling water until tender. Drain.
  2. Using a potato masher, mash hot potatoes until smooth. Add milk, feta, parmesan and chives, stir until combined. Season to taste.
