Frozen Kiwi – Yoghurt Creams

Description:
Gorgeous green kiwifruit star in this pretty frozen dessert.
Ingredients:
- 600ml whipping cream
- 6 cardamom pods, bruised
- 1/2 cup caster sugar
- 4 kiwifruit, peeled
- 2 tablespoons runny honey
- 300g creamy vanilla yoghurt
- Chopped pistachios and glace ginger for decoration
- extra kiwifruit for decoration
Method:
- Put cream, cardamom pods and sugar in a pan and bring to the boil. Reduce heat to low and simmer, stirring frequently for 5 minutes. Cool completely and then strain. Meanwhile finely chop kiwifruit removing the white core. Put into a pan with honey and stir over a low heat for 2 minutes. Cool and add yoghurt and cream, mixing well. Line individual freezer-proof moulds with plastic wrap and fill with cream mixture. Freeze. About 20 minutes before serving remove from freezer. Turn out on to serving plates and decorate with kiwifruit and chopped pistachios and ginger.
