Green Bean, Egg and Walnut Salad with a Basil Dressing

Description:
This fabulous salad is ideal for a buffet or to accompany a barbecue.
Ingredients:
- 600g fine Green Beans
- Salt 2 tsp tahini
- Juice of 1 lemon
- 2 tbsp olive oil
- 10 basil leaves, finely sliced
- Freshly ground black pepper
- 1/2 small Red Onion, thinly sliced
- 3 hard-boiled eggs, quartered
- 4 tbsp walnut halves
- 8 anchovy fillets, optional
Method:
- Top and tail beans then cook them in a large amount of salted water boiling water for about 5 minutes. Drain and cool beans in ice-cold water.
- In a salad bowl, mix tahini and lemon juice, then whisk in oil and basil and season with pepper.
- Toss beans in dressing. Top with onion rings, quartered eggs, walnut pieces and anchovy fillets.
