Green Bean, Egg and Walnut Salad with a Basil Dressing

Description:

This fabulous salad is ideal for a buffet or to accompany a barbecue.

Ingredients:

 

  • 600g fine Green Beans
  • Salt 2 tsp tahini
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • 10 basil leaves, finely sliced
  • Freshly ground black pepper
  • 1/2 small Red Onion, thinly sliced
  • 3 hard-boiled eggs, quartered
  • 4 tbsp walnut halves
  • 8 anchovy fillets, optional

Method:

 

  1. Top and tail beans then cook them in a large amount of salted water boiling water for about 5 minutes. Drain and cool beans in ice-cold water.
  2. In a salad bowl, mix tahini and lemon juice, then whisk in oil and basil and season with pepper.
  3. Toss beans in dressing. Top with onion rings, quartered eggs, walnut pieces and anchovy fillets.
