- looks like the standard white varieties but with a pale green head
- they have a higher vitamin A content than white caulis
- common green varieties are ‘Alverda’, ‘Macareta’ and ‘Limelight’,
- some green caulis are actually a cross between the white cauli and broccoli – called ‘broccoflower’ (link).
- there are also green types called a Romanesco cauliflower or ‘Chou romanesco’
- these have light green heads made up of very distinctive mosaic of conical spiky florets
- also called Pyramid Cauliflower
- this form has a sweet nutty taste
