Grilled Chicken, Rocket, Pear and Parmesan Salad

Description:

A healthy salad that can be made any time of the year.

Ingredients:

 

  • 300g skinless chicken breast, fillet
  • 120g rocket 1 punnet (250g) cherry tomatoes, halved
  • 2 medium pears, thinly sliced
  • 50g shaved Australian parmesan cheese
  • 1/4 cup balsamic vinegar

Method:

 

  1. Grill chicken until golden and cooked through. Rest for 5 minutes before cutting into slices, keep warm.
  2. Arrange rocket over four serving plates. Top with sliced chicken, cherry tomatoes, and pear slices.
  3. Sprinkle with shaved parmesan and drizzle with balsamic vinegar.
