Grilled Garlic Mushrooms with Garlic Yogurt Dressing

Description:
A tasty snack which can also compliment a range of different meals.
Ingredients:
- 1 tablespoon (20g) Australian reduced fat dairy spread
- 1 clove garlic, crushed
- 4 large field mushrooms
- 1 cup Australian skim or low fat natural yogurt
- 1/2 red capsicum, diced
- 2 tablespoons finely chopped flat leaf parsley
- pepper, to taste
Method:
- Heat dairy spread and half the garlic in a frypan over low heat until melted. Add mushrooms and sauté for 2-3 minutes.
- Remove from frypan and place under a hot grill, cook for a further 5 minutes or until tender.
- Combine yogurt, red capsicum, parsley and remaining garlic and season to taste.
- Top mushrooms with yogurt dressing and serve.
