Mango, Snow Pea & Chicken Salad

Description:

A light, nutritious main meal or ideal as part of a buffet meal.

Ingredients:

 

  • 4 tbsp peanut oil
  • 1 tsp sesame oil
  • 1 tbsp honey
  • 1 tsp finely sliced red chillies, seeds removed
  • Juice of 1 lime or lemon
  • 2 chicken breast fillets, skin and excess fat removed
  • 12 small Cos lettuce leaves
  • 6 small radicchio leaves
  • 125g snow peas, blanched
  • 1/2 punnet snow pea shoots
  • 1 large or 2 small mangos, peeled and sliced (see Tip)
  • 2 Lebanese cucumbers, sliced

Method:

 

  1. Combine peanut oil, sesame oil, honey, chillies and lime (or lemon) juice in small bowl.
  2. Arrange chicken on plate, pour half of the chilli-lime mixture over and reserve the rest to use as the dressing. Cover and refrigerate 1 hour.
  3. Cook chicken on a hot barbecue or until a hot grill until golden brown and cooked through. Allow to cool, then slice and arrange on platter with remaining ingredients.
  4. Drizzle with reserved chilli-lime mixture and serve at once.

Tip: For a quick and easy vegetarian dish, arrange slices of your favourite cheese with the mangoes and vegetables (try Brie, Camembert or smoked cheddar).
