Mango, Snow Pea & Chicken Salad

Description:
A light, nutritious main meal or ideal as part of a buffet meal.
Ingredients:
- 4 tbsp peanut oil
- 1 tsp sesame oil
- 1 tbsp honey
- 1 tsp finely sliced red chillies, seeds removed
- Juice of 1 lime or lemon
- 2 chicken breast fillets, skin and excess fat removed
- 12 small Cos lettuce leaves
- 6 small radicchio leaves
- 125g snow peas, blanched
- 1/2 punnet snow pea shoots
- 1 large or 2 small mangos, peeled and sliced (see Tip)
- 2 Lebanese cucumbers, sliced
Method:
- Combine peanut oil, sesame oil, honey, chillies and lime (or lemon) juice in small bowl.
- Arrange chicken on plate, pour half of the chilli-lime mixture over and reserve the rest to use as the dressing. Cover and refrigerate 1 hour.
- Cook chicken on a hot barbecue or until a hot grill until golden brown and cooked through. Allow to cool, then slice and arrange on platter with remaining ingredients.
- Drizzle with reserved chilli-lime mixture and serve at once.
Tip: For a quick and easy vegetarian dish, arrange slices of your favourite cheese with the mangoes and vegetables (try Brie, Camembert or smoked cheddar).
