Marinated Artichoke Bruschetta

Description:

Ideal as a starter or team this Bruschetta up with your favourite soup to make a light meal.

Ingredients:

 

  • 1 bread stick
  • 2-3 tbsp olive oil
  • 2 crushed garlic cloves
  • 2 tbsp prepared pesto
  • Slices of Easy Marinated Artichokes (see recipe)

Method:

 

  1. Preheat oven to 200°C.
  2. Cut bread stick into long diagonal slices.
  3. Combine olive oil with crushed garlic cloves and brush mixture over the bread slices.
  4. Bake until lightly browned, about 10 minutes.
  5. Remove from oven and spread pesto lightly over bruschetta. Top with sliced marinated artichokes and serve at once.
