Mountain Bread Roll Ups

Description:

An easy to make, nutritious snack – ideal for picnics or school lunches.

Ingredients:

 

  • 4 sheets Mountain bread
  • 1 avocado, peeled and mashed
  • 1 bunch asparagus, trimmed and steamed until tender
  • 2 tomatoes, sliced
  • 1 carrot, grated
  • 4 lettuce leaves, shredded
  • Salt & pepper to taste

Method:

 

  1. Spread each sheet of mountain bread with mashed avocado.
  2. Top with asparagus spears, tomato, carrot, lettuce and salt and pepper.
  3. Roll up firmly, cut into desired lengths and serve.

Tips:

  • Mountain bread is available at larger supermarkets
  • If you don’t have avocado, try spreading a little pesto, salsa or houmus dip onto the mountain bread.
  • Try these roll ups using roasted capsicum, eggplant and zucchini instead of asparagus, tomatoes and carrot.
