Mountain Bread Roll Ups

Description:
An easy to make, nutritious snack – ideal for picnics or school lunches.
Ingredients:
- 4 sheets Mountain bread
- 1 avocado, peeled and mashed
- 1 bunch asparagus, trimmed and steamed until tender
- 2 tomatoes, sliced
- 1 carrot, grated
- 4 lettuce leaves, shredded
- Salt & pepper to taste
Method:
- Spread each sheet of mountain bread with mashed avocado.
- Top with asparagus spears, tomato, carrot, lettuce and salt and pepper.
- Roll up firmly, cut into desired lengths and serve.
Tips:
- Mountain bread is available at larger supermarkets
- If you don’t have avocado, try spreading a little pesto, salsa or houmus dip onto the mountain bread.
- Try these roll ups using roasted capsicum, eggplant and zucchini instead of asparagus, tomatoes and carrot.
