Pasta with Vegetables

Description:
This simple pasta dish is easy to prepare and full of flavours.
Ingredients:
- 300g short pasta
- 2 tablespoons unsalted butter
- 2 medium carrots julienne
- 2 medium zucchini julienne
- 5 anchovy fillets finely chopped
- 1 cup of cream
- 1/4 teaspoon saffron threads
- Salt and pepper
- Grated Parmesan (optional)
Method:
In a large pot of boiling water start cooking the pasta until it is al dente. In the meantime, melt the butter in a large pan and cook the carrots and zucchini for about 5 minutes over a medium heat. Season with salt and pepper to taste. Add the anchovies, and cook until these have dissolved. Pour in the cream, and bring to the boil, add the saffron and cook until the liquid has reduced by half. Once the pasta has cooked, drain and add to the sauce and stir thoroughly until the pasta is well coated. Serve immediately. Can be served with grated Parmesan.
