- Pine nuts are the edible seeds of pine trees and different species are harvested in different countries
- In Europe they are mainly collected from Pinus pinea; in Asia from Pinus koraiensis (Korean Pine) and Pinus gerardiana (Chilgoza pine); in America from 3 of the pinyon pines (Colorado, Single Leaf and Mexican)
- There is also an Australian native pine nut called the Bunya nut (Araucaria bidwillii)
- Shelled nuts are small (to 10 mm long), teardrop shaped with a pointed tip, and white to cream in colour
- They have the highest protein content of any seed or nut
- Eaten raw or used in cooking
- Most supplies in Australia are imported Pinus pinea from Italy or Korean pine nuts from China
