Pineapple Coconut Gelato

Description:
Enjoy as a snack, or, dress it up for a dessert with thinly sliced pineapple.
Ingredients:
- 1 pineapple
- 3/4 cup caster sugar
- 1 tsp rum essence
- 220 ml coconut milk
Method:
- Using a large sharp knife, cut 1 pineapple in half, then cut into thick slices,
- Using a small sharp serrated knife, remove skin and tough centre.
- Cut pineapple into chunks and combine with caster sugar. Set aside 10 minutes (see Tip).
- Blend pineapple mixture with rum essence and coconut milk. Pour into freezer container or lunchbox and freeze 6 hours.
- Turn out of container and, using a large sharp knife, cut into slices or spears and serve at once.
Tip: Combining fruit with sugar – and allowing it to stand 10 minutes – allows juices to be given off, thus making blending easier.
* Kids will need adult supervision using a blender.
