Semi-dried Tomato Avocado Antipasto

Description:
This avocado antipasto is an ideal starter or delicious for a nutritious quick snack or a light meal.
Ingredients:
- 2 avocados, cut in half lengthways, pip removed
- 16 semi-dried tomatoes, sliced
- Feta cheese, sliced thinly
- Halved pitted olives
- Fresh basil leaves.
Dressing
- 2 tbsp extra virgin olive oil
- Juice of half lemon
- Cracked black pepper
Method:
- Arrange avocado halves on serving plates and arrange semi-dried tomatoes, feta cheese, olives and basil leaves in pip cavity of each avocado.
- To make the dressing: combine olive oil, lemon juice and pepper in screw topped jar and shake until combined.
- Drizzle over avocados and serve at once.
Tip: To prevent browning, immediately sprinkle avocado halves with lemon or lime juice.
