Sesame Corn

Description:

These are a great snack – or easy to reheat to accompany a barbecue.

Ingredients:

 

  • 4 corncobs
  • 1 tbsp peanut oil or olive oil
  • 1/2 tsp toasted sesame oil
  • 2 tbsp sliced chives
  • Salt and coarse black pepper to taste

Method:

 

  1. Remove leaves and silk from corncobs.
  2. Cook until tender: steam or boil for 15 minutes or place in microwave proof dish with 2 tbsp water, cover and cook on high 8 minutes.
  3. Using a large sharp knife, cut into serving sizes then pierce with skewers.
  4. Combine peanut (or olive) oil with sesame oil, chives, salt and pepper. Dip corn in oil and herb mixture and serve at once.

Tip: You can cut the corn cobs into thick slices and pierce them with skewers to make them easier to eat.
