Description:
An easy and light meal to make that is healthy and great for the kids.
Ingredients:
- 1 bunch English spinach
- 250g Australian ricotta, crumbled
- 250g Australian feta, crumbled
- 8 spring onions, finely chopped
- 1 egg, lightly beaten
- 6 sheets filo pastry
- 40g Australian butter, melted
- sesame seeds, for sprinkling
- 1/2 cup Australian natural yogurt, for serving
- crisp green salad, for serving
Method:
- Wash spinach well and discard stems (you should have approximately 200g of spinach leaves). Strain off excess water and place in a saucepan. Heat covered, until just wilted and soft. Roughly chop and set aside to cool. Squeeze out excess moisture. Combine ricotta and feta and stir in spinach, spring onions, and egg.
- Layer the sheets of filo pastry, brushing between each with melted butter. Spoon mixture along the longest side of pastry. Fold in ends and roll over to enclose filling.
- Place Spanakopita on a lined baking tray, and brush with melted butter. Sprinkle with sesame seeds. Bake at 200°C for 30 minutes, or until golden brown. Serve warm or cold accompanied a dollop of yogurt and crisp green salad.
