- These are predominantly green olives but may also come in black
- Most are imported from Spain, and are also called Manzinello or Manzanillo olives
- Imported Spanish olives are treated with lye to remove bitterness
- Lye is not used to treat Australian olives for environmental reasons
- Small oval shaped green olives
- There are also black Manzanillo olives available, specifically the variety ‘Sevillano’ or ‘Spanish Queen’
- green olives can turn brown if left in air for a few hours
- Available: imported – all year; Australian-grown – January to March
