General Description

  • These are predominantly green olives but may also come in black
  • Most are imported from Spain, and are also called Manzinello or Manzanillo olives
  • Imported Spanish olives are treated with lye to remove bitterness
  • Lye is not used to treat Australian olives for environmental reasons
  • Small oval shaped green olives
  • There are also black Manzanillo olives available, specifically the variety ‘Sevillano’ or ‘Spanish Queen’
  • green olives can turn brown if left in air for a few hours
  • Available: imported – all year; Australian-grown – January to March
