Steamed Fish with Ginger and Spring Onion

Description:
Use fresh herbs to enhance the flavour of fresh fish in this healthy, low fat dish.
Ingredients:
- 4 x 150g fillets of deep sea white fish (blue eye or wild barramundi)
- 1 tablespoon soy sauce
- 2 cloves garlic, sliced
- 4 spring onions, shredded
- 1 tbsp fresh ginger
- 1 tbsp finely shredded Coriander leaves and stems
- 1 tbs vegetable oil
Method:
- Place half the garlic, ginger and coriander on a plate Put the fish on top Sprinkle with the soy sauce. Place in a steamer for about 10 minutes or until cooked through. Transfer to a serving plate Place the remaining garlic, ginger, spring onion on top Heat the oil to smoking and pour over the fish Garnish with remaining coriander
