General Description/History

Raw sugar cane can be found in the markets in lengths of about 60 cm. It is most usually sold at street stalls where it is squeezed through rollers to obtain sugar cane juice, a refreshing drink. It is peeled and split for use the “skewers” for Vietnamese grilled sugar cane prawns. It can also be peeled and chewed – the sweet juice being sucked out and the fibrous solids discarded.
