Description:

Layers of the best of summer fruits with a juicy syrup.

Ingredients:

 

  • 500g watermelon
  • 3/4 punnet strawberries
  • 1/3 punnet raspberries
  • 1/3 punnet blueberries
  • 1 sprig mint
  • 1/2 cup sugar
  • 1/2 cup water

Method:

 

  1. Place sugar and water in saucepan and bring to the boil, stirring occasional ( you can add a splash of champagne or a liqueur if you desire)
  2. Simmer until all sugar is dissolved and liquid starts to thicken, remove from heat and chill
  3. Peel and cut watermelon into 2cm dice
  4. Wash and hull strawberries, removing leaves
  5. Wash, pick and shred mint
  6. Place fruit, berries and mint in serving bowl or glass and pour over sugar syrup
