General Description/History

The dark green leaves of this flat cabbage with its white stems are tougher and stronger flavoured than standard bok choi and the mature plants are preferred cooked (stir-fried, steamed or in soups) rather than raw. Picked young leaves are sold loose as a salad green in the same way as rocket.
