Vegetable Fettuccine with Bacon & Pine Nuts

Description:

A delicious and easy to make winter meal or side dish.

Ingredients:

 

  • 500g Jap pumpkin, cut into 1 cm slices
  • 2 tbsp olive oil
  • Salt & pepper
  • 500g fettuccine
  • 2 capsicums, sliced
  • 4 rashers lean bacon, cut into strips
  • 1/2 bunch spring onions, sliced
  • 1 cup freshly chopped parsley
  • 2 tbsp toasted pine nuts

Method:

 

  1. Pre heat oven to 200°C.
  2. Brush a baking tray with a little of the oil, then combine 1 tablespoon of the oil with the garlic. Brush garlic oil over pumpkin slices and bake until tender, about 20 minutes.
  3. Meanwhile get the fettuccine cooking in a large pan of boiling water.
  4. Heat a large saucepan with remaining oil and stir-fry capsicums 3 minutes. Add bacon and spring onions and stir-fry 5 minutes.
  5. Drain fettuccine when just tender and immediately toss with capsicums, bacon, spring onion, roast pumpkin and chopped parsley.
  6. Top with toasted pine nuts and serve piping hot.
