Vegetable Fettuccine with Bacon & Pine Nuts

Description:
A delicious and easy to make winter meal or side dish.
Ingredients:
- 500g Jap pumpkin, cut into 1 cm slices
- 2 tbsp olive oil
- Salt & pepper
- 500g fettuccine
- 2 capsicums, sliced
- 4 rashers lean bacon, cut into strips
- 1/2 bunch spring onions, sliced
- 1 cup freshly chopped parsley
- 2 tbsp toasted pine nuts
Method:
- Pre heat oven to 200°C.
- Brush a baking tray with a little of the oil, then combine 1 tablespoon of the oil with the garlic. Brush garlic oil over pumpkin slices and bake until tender, about 20 minutes.
- Meanwhile get the fettuccine cooking in a large pan of boiling water.
- Heat a large saucepan with remaining oil and stir-fry capsicums 3 minutes. Add bacon and spring onions and stir-fry 5 minutes.
- Drain fettuccine when just tender and immediately toss with capsicums, bacon, spring onion, roast pumpkin and chopped parsley.
- Top with toasted pine nuts and serve piping hot.
